La Truffe’s House-Made Truffle Sausage is an exceptional charcuterie product that combines the centuries-old art of French curing with the nobility of the summer truffle. Made from Porc Gris pigs—a hardy, flavorful breed with dense, aromatic meat—it is enhanced with shavings of Tuber Aestivum at more than 0.4%, enough for each slice to reveal the truffle’s characteristic notes between the streaks of fat and lean meat.
Its natural rind is thin and very white, with a light coating of white bloom typical of successful ripening. When cut, the flesh is a deep red, marbled with aged fat and visible pieces of truffle. On the palate, the texture is firm yet melt-in-the-mouth, with a complex flavor profile: salt, meat, high-quality fat, and the earthy, nutty undertones of the summer truffle that come through in the fat.
Served in generous slices on an appetizer platter with a fruity Côtes du Rhône, accompanied by artisanal pickles, sourdough country bread, and a slice of aged Comté cheese, this appetizer turns an ordinary day into a celebration. It can also be melted into an omelet, a gratin, or a white pizza for a rustic and flavorful dish.
