Gouda à la Truffe d'Été is an unexpected interpretation of a Dutch classic, demonstrating that truffles can be successfully incorporated into pressed cooked cheeses, not just soft ones. Made from thermized cow's milk, it has the smooth, hard black wax rind characteristic of Gouda, behind which lies a young, supple, creamy to pale yellow paste, sprinkled with slivers of summer truffle. Tuber Aestivum visible when cut.
The summer truffle, softer and more accessible than Melanosporum, blends naturally with the dairy sweetness of young Gouda: its notes of hazelnut and fresh mushroom complement the buttery profile of the cheese without overpowering it.
