Black Truffle Purée Tuber Melanosporum is a preparation of exceptional aromatic concentration, designed for demanding chefs who seek to infuse their recipes with the fragrance of the Black Diamond, with precision and generosity. Made with 70% of finely chopped black truffles, combined with extra virgin olive oil and a pinch of salt, it has a creamy texture, a deep black color and an immediately recognizable aroma.
Its tube or jar format offers a precision dosage not always possible with whole or broken truffles. It's easy to store and extremely practical for raising a sauce at the last minute, flavoring a homemade butter or enriching a risotto off the heat. Half a teaspoon added to a cream sauce off the heat can completely transform a dish.
Its uses are many: spread on rye bread toast as an aperitif, mixed with fresh ricotta to garnish stuffed pasta, incorporated into an exceptional vinaigrette to accompany a seasonal salad, or simply sprinkled over steaming fried eggs. Simplicity is always the order of the day.
