This Basil Pesto with Summer Truffle is a gastronomic reinterpretation of a classic Mediterranean dish, enriched by the aromatic contribution of the Tuber Aestivum. The carefully elaborated recipe combines fresh basil - 48% of the composition - with olive oil, cheese, salt and 5% of summer truffle juice: a sufficiently generous dosage for the truffle to really make itself felt without erasing the herbaceous freshness of the basil.

The texture is unctuous, the fragrance immediately evocative of Italian terraces, with that earthy, fungal touch that only truffles can provide. The hazelnut notes of Tuber Aestivum blend naturally with the richness of basil and the oiliness of olive oil to create a perfectly balanced whole.

Its uses are numerous: generously drizzled over fresh al dente pasta, spread over grilled bruschetta, used as a marinade for roast chicken, incorporated into a vinaigrette for a mozzarella di bufala salad, or served as an accompaniment to sea bream carpaccio. It is also ideal as a starter sauce for homemade gnocchi.
