Visit Tagliolinis with eggs and truffles are made using traditional methods. They are sieved and packaged by hand, after a slow drying process. Our pasta is extruded in bronze, rolled and cut with a knife: all these steps guarantee a particularly elastic consistency and excellent baking properties.
Chef's tip: Excellent sautéed with melted butter and a few fresh sage leaves, or combined with our organic butter, organic olive oil or truffled pearls.

Tagliolini with Eggs and Summer Truffles are the result of a rigorous artisanal process that radically distinguishes them from industrial pasta: bronze extrusion, hand sieving, knife cutting and slow drying. Each of these steps contributes to a remarkably elastic texture, exemplary baking properties, and a capacity to absorb sauces with a generosity that smoothed pasta can't match.
Tagliolini is an extremely fine egg pasta, the younger sister of tagliatelle, typical of Piedmont and Emilia-Romagna. Enriched with summer truffles, the buttery notes of hazelnut and undergrowth are expressed in their purest form. The chef recommends sautéing them directly in the pan with sparkling butter, a few shavings of fresh truffle or a spoonful of truffle carpaccio, and grated Parmesan.
They're also an elegant accompaniment to delicate cream and mushroom sauces, Gorgonzola sauce with truffles, or simply a buttered, reduced poultry stock base. Don't overload: they don't need any help to shine.
