Carpaccio de Truffes d'Été is a refined preparation that transforms the Tuber Aestivum into translucent slices, ready to sublimate your plates with minimum effort and maximum effect. Made from selected, fully ripe summer truffles, this carpaccio offers uniform, thin slices that require no additional preparation.
Made with 75% of summer truffle (Tuber aestivum Vitt.), sunflower oil, salt and natural flavor, the product is ready to use. The texture is slightly firm, and the slices are perfectly suited to presentation. The roasted hazelnut and fresh mushroom aromas typical of Tuber Aestivum are fully expressed at room temperature.
In gastronomy, summer truffle carpaccio is ideal draped over a Charolais beef carpaccio seasoned with olive oil and fleur de sel, placed on a freshly baked white pizza, spread over pasta with sage butter, or simply presented as an aperitif on ricotta crostini. On an arugula, rocket and Parmesan salad, it adds an earthy note that elevates the whole.
