Black Truffle Juice is one of the most versatile ingredients in truffle cuisine. Obtained from the sterilization of Melanosporum truffles, it concentrates in aqueous solution a large proportion of the volatile compounds that make up the character of the Black Diamond: earthy, undergrowth, deep mushroom and cocoa notes. Its color is dark brown, its fragrance immediately evocative.
98% of black truffle juice Tuber Melanosporum and 2% of salt, it contains no additives or artificial flavor enhancers. It's the purity of natural extraction, in a jar - an honest and profound product.
In the kitchen, one or two tablespoons are enough to transform a veal stock, butter reduction or cream sauce. It enhances velvety soups, refined vinaigrettes and short marinades for white meats. It can also be used to deglaze a pan after cooking a duck breast or St. Pierre, in just a few seconds. Al dente pasta, simply seasoned with truffle juice, olive oil and Parmesan, is one of the simplest and most delicious dishes inspired by this product.
