Kaspia Truffle Tarama is an unusual and successful marriage of two worlds that seemed so far apart: the sea and the forest, the smoky iodine of cod roe and the earthy aroma of summer truffles. Tuber Aestivum. Smoked and salted cod roe (27%), truffle chips (2.94%) and natural black truffle flavour make up a tarama with an aromatic originality that's hard to describe until you taste it.
The smokiness of the cod opens up first, then the truffle introduces its notes of hazelnut, undergrowth and mushroom as the rapeseed oil continues, creating a persistence on the palate that classic tarama doesn't have. The texture is equally smooth and airy, but the profile is simply much more complex. This is the tarama to serve when you want to surprise your guests without presenting an overly intimidating product.
It's perfect on Kaspia blinis with a dollop of crème fraiche and a sprinkling of chives. It also works well as a garnish for avocado with a citrus vinaigrette, as a sauce for al dente pasta with a drizzle of olive oil, or simply spread on rye bread with a glass of Champagne Blanc de Blancs.
