Chutney d'Oignons à la Truffe d'Été is a remarkably versatile condiment based on 72% caramelized onions, combined with brown sugar, wine vinegar, mustard and summer truffles. Tuber Aestivum to 1%. The caramelization of the onions is the starting point: it gives the chutney its natural sweetness, depth and characteristic amber-brown color.
Wine vinegar and mustard provide the counterbalancing acidity and bite necessary for any successful chutney, preventing the sweetness from becoming overpowering. The summer truffle, discreet but present, adds a woody-fungy dimension that elevates this condiment far above ordinary onion jam. This is an elegant table chutney of underestimated complexity.
It accompanies with equal ease a slice of duck foie gras, a platter of mature cheeses - Comté, Cantal, Ossau-Iraty - sliced cold meats, grilled fish or country-style terrines. It's also a first-class garnish for gourmet hamburgers, chicken sandwiches or mushroom omelets.
