Description

Pistachio Pesto with Summer Truffle is an original and sophisticated alternative to the classic Genovese pesto, replacing basil and pine nuts with Sicilian pistachio - sweeter, greener, more buttery - and enriching the whole with the aromatic contribution of the Tuber Aestivum. It's a condiment of rare aromatic generosity, with a creamy texture and the deep green color characteristic of top-quality pistachios.

The summer truffle, with its notes of hazelnut and fresh mushroom, blends naturally with the fatty, slightly sweet richness of pistachio, creating a combination of immediate aromatic harmony. Carefully selected ingredients ensure remarkable freshness and flavor intensity, without recourse to enhancers or preservatives.

This pesto sublimates fresh pasta, risottos and gnocchi. It's also great on grilled bruschetta, with fresh ricotta and toasted walnuts, or as a marinade for roast chicken or herb-crusted sea bream. Mixed with crème fraiche, it makes a velvety, green sauce to accompany scallops in a golden crust on a white plate.
