The Summer Truffle-Infused Gorgonzola Sauce combines two ingredients that share intensity, depth, and a refusal to be bland: Gorgonzola AOP—a Lombardian blue cheese of remarkable creaminess, melted into a rich cream—and the Tuber Aestivum, whose notes of hazelnut and fresh mushrooms balance and enhance the boldness of the blue cheese without ever overpowering it.

The sauce has a velvety, coating texture with a rich creaminess that generously coats the pasta. The Gorgonzola, melting under the influence of the cream, retains its bluish hues and distinctive character, simply softened and made more approachable by the earthy, truffle-like notes. It’s a sauce that wins over everyone at the table, even those who thought they didn’t like Gorgonzola.

Served over wide pappardelle, rigatoni, or potato gnocchi, topped with a sprinkling of walnut halves and a fried sage leaf, this is a hearty fall dish. It also pairs well with veal cutlets, honey-roasted pears, or an impromptu fondue.
