Description
Carbonara Sauce with Summer Truffle is a rediscovery of the original Roman recipe - no cream, no frills, free-range eggs and carefully selected ingredients - then enhanced by the aromatic contribution of the Tuber Aestivum. The summer truffle does not betray the Carbonara: it reveals its latent depth, that of dark eggs, freshly ground black pepper and guanciale that melts in the heat of the pasta.
The absence of cream is an irreversible gastronomic decision: the texture is achieved by the natural emulsion of the egg, the fat from the bacon and the starch from the pasta. The truffle plays the role of amplifier - it lengthens the finish, giving it a woody dimension that transforms a popular dish into a memorable gastronomic moment.
