Summer Truffle - Tuber Aestivum - is the truffle of fine weather, harvested from May to September throughout southern Europe. Also known as the «Truffe de la Saint-Jean», it is the most accessible of the great truffles, without sacrificing its character or elegance.
Its exterior resembles that of Melanosporum: black, bumpy, warty skin. But its flesh is quite different - light, almost beige when ripe, with fine white veins running through it. Its texture is crisp, slightly firm, and its fragrance is subtle and delicate, developing beautiful notes of toasted hazelnut, fresh mushroom and aromatic herbs. This milder aromatic profile makes it an ideal ally for summer cuisine.
It is perfect for light dishes: carpaccios, warm salads, fresh buttered pasta, soft-boiled eggs, herb risottos. Unlike white truffles, it can withstand moderate heat without losing its personality. It can also be grated raw at the last minute to intensify aromas.
