Tarama à la Truffe is a gastronomic interpretation of a classic aperitif, created around the unusual and successful encounter between smoked cod roe and Summer Truffle. Composed of 27% of smoked and salted cod roe, bound in rapeseed oil and flavored with truffle chips. Tuber Aestivum and truffle juice, it offers a taste profile of rare originality.
The texture is silky, unctuous and lightly aerated - that of a tarama from a great house. The taste, iodized and smoky, typical of cod roe, is extended by the earthy, nutty notes of summer truffle, creating a maritime-forest contrast of remarkable sophistication. It doesn't apologize for being tarama - it revels in it, magnified.
Served on lightly buttered warm blinis, with a dollop of heavy crème fraiche and a few sprigs of chives, it's the ideal aperitif to kick off a festive meal. It can also be served on rye toast, as an accompaniment to grav lax salmon verrines, or as the base of a Nordic sauce mixed with fresh ricotta and a squeeze of lime.
