The Black Truffle of Périgord - Tuber Melanosporum - is the absolute icon of French gastronomy. Nicknamed the «Black Diamond», it is harvested from late December to early March in the oak groves of Périgord, Quercy and Provence. On the outside, its black, warty skin is distinctive. Its flesh, deep black with white veins, reveals a fragrance of exceptional complexity: notes of damp undergrowth, cocoa, violets and humus, with an aromatic persistence that leaves a lasting impression on discerning palates. It is this distinctive fragrance that has earned Melanosporum its worldwide reputation for centuries.
Unlike its white cousin, it does very well in mild heat. Grated onto an egg casserole, slipped under the skin of poultry or incorporated into a beurre blanc sauce, it transforms the simplest preparations into gastronomic masterpieces. One gram is enough to sublimate four servings.
