This Basil Pesto with Summer Truffle is a gastronomic reinterpretation of a classic of Mediterranean cuisine, enriched by the aromatic contribution of the Tuber Aestivum. The carefully-crafted recipe combines fresh basil - 48% of the composition - with olive oil, cheese, salt and 5% of summer truffle juice: a sufficiently generous dose for the truffle to make its presence felt without overpowering the herbaceous freshness of the basil.

The texture is creamy, the flavour immediately evocative of Italian terraces, with that earthy, fungal touch that only truffles can provide. The hazelnut notes of the Tuber Aestivum blend naturally with the richness of the basil and the oiliness of the olive oil to create a perfectly balanced whole.

It has many uses: generously drizzled over fresh pasta al dente, spread over grilled bruschetta, used as a marinade for roast chicken, incorporated into a vinaigrette for a mozzarella di bufala salad, or served with a carpaccio of sea bream.
