Coeur de Saumon à la Truffe d'Été is a seafood delicatessen with an original concept: a roll of smoked salmon fillet generously flavored with truffle. Tuber Aestivum, salmon, shaped into a cylinder and sliced like a sausage. The iodized, smoky finesse of salmon meets the earthy, nutty sweetness of summer truffles to create a maritime-forestry marriage of great elegance.
Each slice reveals deep pink, velvety salmon flesh, with the characteristic traces of incorporated truffle. The fragrance is smoky, seafoody and fungible - a bewildering combination that is immediately seductive. The texture, halfway between grav lax salmon and smoked trout flesh, is soft and melting.
Served thinly sliced on an aperitif platter alongside crème fraiche with chives and toast, it is also exceptional as a cold starter with a dill and caper vinaigrette, or placed on a plate of rocket with lemon and olive oil. It echoes the great traditions of the fine aperitif in the family homes of Brest and Scan Dinaviques.
