Bellota Pata Negra Iberian Ham is one of the world's greatest hams - a claim that can be made without fear of debate. Made from purebred Iberian pigs, raised in the wild in the dehesas from Extremadura and Andalusia, fed exclusively on acorns (bellota) during the montanera, this ham has the highest possible classification: 100% Ibérico de Bellota.
Acorns from cork and holm oaks give pork intramuscular fat an extraordinary lipid composition, rich in oleic acid, similar to that of olive oil. The result is a flavor that permeates every muscle fiber: long, melting, with notes of hazelnut, mushroom and barely burnt caramel. Maturation for 36 to 48 months completes this unique aromatic complexity.
To reveal its full flavor, we recommend taking it out of the fridge 20 minutes before serving, and letting it spread lightly on a warm plate. Enjoy it on its own, with farmhouse bread or breadsticks, accompanied by a Fino de Jerez or a Rioja Gran Reserva. No other seasoning is necessary - this ham doesn't need any.
