Truffled Pecorino Cream is a cooking sauce of rare aromatic intensity, born of the encounter between Pecorino - a dry, salty, deep-roasted it alien sheep's milk cheese with a rustic, racee flavor - and summer truffles, whose woody, nutty notes amplify the wild character of sheep's milk. The result is an off-white, slightly grainy cream with a powerful, instantly recognizable aroma.
Its texture is unctuous, slightly saltier than Parmesan cream, with a longer, more aggressive aftertaste. It is precisely this characteristic that makes it a cooking ingredient rather than a neutral sauce: it transforms dishes, not passively accompanies them.
Used in a risotto alla cacio e truffe, in a tipo Cacio e Pepe pasta sauce, in a potato gratin with truffles, or as a base for an arugula quiche, it imposes its personality with elegance. It can also accompany white meat cooked at low temperature, oven-roasted chicken from November or Mediterranean-style rabbit.
