Pascal Brunstein, one of France's finest chocolate makers (MOF), has come up with a new concept for the House of Truffle this white chocolate truffle that looks just like the real thing.

It consists of a light chocolate shell made of slightly caramelized white chocolate. The interior is made from a hazelnut-almond praline, marbled with mango and passion fruit caramel, and puffed rice cereal to add a touch of crunch.

Blond chocolate has hints of shortbread.

The mango and passion fruit caramel develops fruity flavors that pair perfectly with the praline. The mango adds sweetness, while the passion fruit contributes its distinctive taste—both sweet and tangy.

Store between 15 and 18°C

Following the success of the Trompe-l’Oeil dark chocolate truffle, Maison de la Truffe is reintroducing the concept with an even sweeter and more indulgent take: the Blond Chocolate Trompe-l’Oeil Truffle. Blond chocolate—also known as Dulcey or caramelized chocolate—is white chocolate that has been caramelized, with pronounced notes of salted butter, cookie, and melted caramel.

True to the concept, this piece is sculpted to perfectly mimic the bumpy shape and lumpy surface of a real wild truffle. Its crisp white chocolate shell conceals a silky ganache with truffle aromas that surprises and delights from the very first bite. Each piece weighs 200 grams.

The combination of caramelized blond chocolate and truffles is a culinary innovation: the sweet roundness of the former softens the earthy depth of the latter, creating a deliciously balanced treat that’s very accessible.
