Kaspia Royal Beluga Caviar: The Ultimate in Caviar
Beluga caviar is undoubtedly the most prestigious of all caviar varieties. It comes from the Huso huso sturgeon, the rarest species and the one that takes the longest to mature—it takes between 18 and 20 years for a female to produce her first eggs. Growing up to four meters long and weighing over 800 kilograms, the Beluga remains the iconic sturgeon of the Caspian Sea. Its scarcity in the wild has led to its classification as an internationally protected species; the caviar offered by Caviar Kaspia comes exclusively from exceptional farms monitored by CITES.
A unique sensory experience
The texture of Royal Beluga is instantly recognizable: rich, firm, yet melts in your mouth. Its color ranges from light pearly gray to deep anthracite gray, with occasional golden highlights on the most mature eggs. On tasting, one first perceives a very gentle burst of briny flavor, followed by a characteristic lingering finish—this aromatic persistence with its hints of slightly buttery almonds is the Beluga's unmistakable signature.
How to Enjoy Béluga Royal
Beluga caviar should never be warmed. Remove the tin from the refrigerator ten to fifteen minutes before serving, place it on a bed of crushed ice, and open it at the last minute to preserve the aroma. Serve at mother-of-pearl spoon or in a horn-shaped cup—never in metal, which would alter the taste. Tasting it on its own is the best way to appreciate it; if that’s not possible, serve it with warm blinis, our baked potato and a spoonful of crème fraîche. An ice-cold vodka or a vintage brut champagne will make the experience even more special.
Preservation and Formats
The Royal Beluga has a long shelf life between -2°C and +2°C, in the coldest part of the refrigerator. Once opened, consume within 48 hours. Available in sizes ranging from 30g to 1kg, it’s perfect for everything from an intimate tasting for two to large celebrations.
