The Beluga is the largest of the sturgeons: it can measure up to 4 metres and weigh up to 800kg. Its eggs are the largest that can be found. This species is considered the rarest and most precious.
Its large grains are soft and melt-in-the-mouth, varying from light to deep grey. Very long on the palate, this caviar is unctuous, with notes of slightly buttered almonds .
